Baby Spinach Salad w/Mangos
Did you ever have that feeling that you wish you could do something else other than the same ol’ thing for dinner? You’re not alone. The one thing that makes cooking enjoyable is knowing what food items go well together, dill with salmon, sage with chicken, apples with pork. Here’s a dish that you can do for the summer that might be fun for you and also taste great, it’s one of the gourmet salads here at The Hotel Jeffery
Dressing:
1 cup mango puree
¼ lemon juice
1 tbl dijon mustard
1 tbs honey
1 pinch curry
¼ cup olive oil
Mix all ingredients (except the olive oil) together. Add the oil, and wisk.
Baby spinach:
1tbl pine nuts
¼ cubed mangos
1tbl raisins
sliced red onions
1tbl chopped bacon and croutons.

Hotel Jeffery's House Salad
Another great salad we have at the Hotel Jeffery is our house salad.
Vinaigrette Dressing
Mix together:
½ cup red wine vinegar
1 tbl honey
1 tbl coriander
and wisk in ¼ cup of olive oil
that’s your vinaigrette.
Add Spring Mix, toss.
Place vinaigrette salad on a plate and put 1 tbl of caramelized walnuts, 1 tbl Gorgonzola cheese, 4 apple wedges on the plate and top with sliced red onions.
Caramelize walnuts by heating butter at a low temp, add walnuts. When they start to brown add a little brown sugar, let melt and take off heat to cool. Chop walnuts, and there you have it!
